Egg Plant Pizza
A sauce-less pizza that you won’t believe. Great taste that satisfies for hours without the guilt.

Yield: 1 serving

Total time: 15 minutes
Ingredients:

* 1 Zone White Pizza Crust
* 4 tablespoons eggplant garlic spread, caponata, Pastene
* 1 tablespoon capers
* 1/2 red bell pepper – cut into thin strips
* 1 slice low-fat provolone cheese – Sargento, cut into strips

Directions:

1. Preheat oven to 450°F. Place the Zone Pizza Crust on a pizza stone or baking sheet.
2. Smear the eggplant spread over the pizza crust, toss on the capers, peppers and cheese and bake for about 10 minutes.

Note: For a crisper crust place in preheated oven, bake direct on rack for 3 minutes. Remove crust, add toppings and bake for another 5-7 minutes.

Ham & Egg Scrabble
Yield: 1 serving

Ingredients:

* 1 Zone Multigrain Bagel
* 1/3 cup Egg Beaters- whites – beaten
* 1 1/2 teaspoons olive oil
* 1 tablespoon green onion – chopped
* 2 slices Canadian Bacon – chopped
* 1 slice tomato
* 3/4 cup raspberries

Directions:

1. Toast the Zone Bagel.
2. In a small bowl beat the egg whites. Mix in olive oil, onion, salt, pepper and Canadian bacon. Spray a small microwave-safe bowl and transfer the egg mix to this bowl. Cook on high for 1 minute, until firm.
3. To make the sandwich, layer the tomato on top of the bottom half of the bagel, then the egg mix, topped with the remaining bagel half. Have raspberries for a sweet ending.

Crunchy Chocolate Breakfast

1/3 cup Perdue Short Cuts – or chicken breast – cooked and cubed

2 leaves lettuce
1 slice tomato

Directions:
1. Toast the Zone Bread.
2. Spread the honey Dijon on bread, then layer chicken, roasted red pepper slices, provolone, lettuce and tomato. Put the top on and enjoy.

* 1 package Zone Orzo
* 1/2 cup chicken broth canned
* 2 teaspoons olive oil
* 1/2 cup onion – chopped into large chunks
* 1/2 clove garlic – pressed
* 3 hearts artichoke canned – quartered
* 3 tablespoons roasted red pepper – slivered
* 1/2 cup tomatoes – diced
* 1 tablespoon black olives – sliced
* 1/4 cup fresh parsley – chopped

Directions:

1. Bring the Zone Orzo and chicken broth to a boil, stirring occasionally. Lower heat to medium and cook until broth is absorbed, stirring all the while, about 10 minutes.
2. Meanwhile heat olive oil in a medium skillet, sauté onion and garlic. When soft, add artichoke hearts, roasted red peppers, tomatoes, black olives, parsley and orzo. Heat until warmed through. Transfer to a serving bowl and enjoy!

Fusilli with Broccoli & Chicken Breast

Straight from the kitchens of Italy to your dinner table! The beauty of Fusilli with Broccoli and Chicken lies in its utterly simple but undeniably tasty ingredients. As the aromas of the garlic and onion begin to rise from the skillet, you can give in to the urge to drool a little, knowing that your mouth and your hips are going to be happy. Experiment with herbs (fresh or dried) and other vegetables (like squash or artichokes) to discover new flavor variations on this classic recipe.

Ingredients:
1 package of Zone Fusilli
½ tablespoon olive oil
1small onion, diced
½ clove garlic, minced
½ cup chicken broth
1 ounce chicken breast, cut into pieces (optional)
1 cup broccoli florets (or whole, chopped broccoli)
1 teaspoon fresh herbs, chopped (such as thyme, sage, oregano or tarragon)
Salt and pepper

Instructions:
• Cook fusilli as directed. Reserve ½ cup of liquid and drain.
• Meanwhile heat olive oil in skillet and add onion. Sauté for 2 minutes and add garlic. Saute another minute.
• Add chicken broth and bring to simmer.
• Add chicken if desired and broccoli. Cover for 5 minutes until chicken is firm to the touch.
• Toss fusilli into the above mixture. Moisten with reserved liquid.
• Salt and pepper to taste. Sprinkle with fresh herbs and serve immediately.

Roasted Mushrooms with Fusilli

Ingredients:
1 package of Zone Fusilli
2 cups mushrooms, sliced
½ small onion, sliced
½ clove garlic, sliced
1 teaspoon olive oil
1 tablespoon parmesan cheese, grated, or shaved parmesan cheese
1 teaspoon fresh herbs, chopped (such as thyme, sage, oregano or tarragon)
Salt and pepper

Instructions:
• Preheat oven to 425° F. In a bowl toss mushrooms, onion, garlic and olive oil.
• Spread out on a sheet pan. Sprinkle with a little salt and place in oven for about 10 minutes.
• Meanwhile cook fusilli as directed. Reserve ½ cup of liquid and drain.
• Return fusilli to the saucepan. Toss with roasted mushroom mixture. Moisten with reserved liquid as necessary.
• Sprinkle with parmesan cheese and fresh herbs. Salt and pepper to taste. Serve immediately.
